Tuesday Day 9 on LOW FODMAP

Today was a real test for me. I was not in the office the entire day; I had to go to a funeral this morning and then straight to a meeting off site and therefore I had to bring all my food with me for the day. A real challenge... especially when I was starving and all I had to eat was a dry turkey sandwich. Blech.
The good news, so far I have drank a cup of coffee for 4 days in a row and it does not seem that coffee with cream has any negative impact on my IBS. Now- I am only having a small coffee (as opposed to my usual Medium) and I have only had it in the afternoon and not in the morning or on an empty stomach. I'll have to test that at some point.
7am- usual FODMAP breakfast (1/2 grapefruit, oatmeal, 1/4 cup almond milk, hardboiled egg)
8am- actually ate my oatmeal now, and the other stuff at 7
10am- Gluten free crackers, 1.25 oz ham, string cheese
1pm- 2 slices udi's dry (ugh), 2 slices turkey, muenster cheese, small coffee with cream and 1 splenda
3pm- 1 oz cashews
5pm- hardboiled egg, 2 handfuls popcorn
7pm- 10 shrimp and 1 turkey sausage sauteed in olive oil, red pepper flakes and turmeric. Olive Mufelletta mixed with mayo. A little of the Mefelltta mixture layered on some lettuces leaves and then topped with shrimp and chopped sausage
Felt really good all day. It is now 10pm and I still feel good! No BM's today.

Carbs: 37%
Fat: 43%
Protein: 20%
I truly do not know how to lower my fat content. It cannot be good for me to be eating a diet this high in fat. Not only that, but the scale seems totally stuck even though I am eating what I consider to be low enough calories to lose weight. I weigh 211 and have quite a bit of muscle... no way are my maintenance calories needs less than 3000 a day. I have been working out hard lately as well. It is quite frustrating and I hope to see some progress soon.
