The The American College of Gastroenterology (AGC) has posted an excellent overview on the topic of foodborne illnesses written by Dr. James Butler and Dr. Greg Martin:

The article includes information on the most common bacteria and viruses that cause foodborne illness, as well as which foods are riskiest, and what one can do to prevent becoming ill from contaminated food. The authors include a discussion of causes and prevention of waterborne illness and bioterrorism risks. Fascinating stuff! The last thing an IBSer needs is to experience any new digestive complications. Prevention is always the way to go.
