Potatoes are starchy. Any starch you don't digest (and humans cannot digest all starch, what we don't is called resistant starch) gets to the colon and feeds the bacteria in there and when they digest carbs, they release gas.So it isn't unexpected you might have this issue with potatoes. If you are lactose intolerant and use milk to make the mashed potatoes that adds to the gas total.

Hi Dave,Could it be confounded by the dairy?Mashed potatoes have butter, milk...maybe you are lactose intolerant andthe true cause is the dairy?Just a thought.

Try some digestive enzymes when you are eating resistant starches.
