Hi!

does anybody happen to know if mung beans are ok? It is a green, protein rich bean, that as far as I know, is used mostly in indian cuisine. In an attempt go vary my protein sources, and their prices, I am looking for suiting vegetable protein. Other beans and fruits/veggies and beans? Any tips?

Unfortunately most of the high protein veggies (beans and legumes) all have carbohydrates that tend to be gassy. Pre-soaking most beans and then cooking in fresh water will reduce the amount of those things.

You might check out the LowFODMAP diet for fruits and veggies less likey to be gassy.

Lean poultry and fish tend to be a lot less likely to be gassy as they don't have the carbs that the gut ferments, but may not be appropriate for everyone.

I've only had mung beans when sprouted, so I don't know much about cooking them as is. I also don't know how good they are for protein once they are sprouted.
