So confused about IBS and Sibo

I have had IBS for years.
For the past two months, I have dealt with everyday symptoms like constipation, diarrhea, acidy taste in my mouth, burping, fullness after meals, gas and bloating.
I’ve been to my Gastro drs office complains about all of this.
They wouldn’t order a SIBO test, then the PA did.
When I saw the Dr before taking the test, he said it’s not reliable and not to take it.
Anyway, I was told that my eating habits might be the culprit, and to change them. ( It was a lot of sugar and carbohydrates)
They told me that if it’s SIBO, that instead of antibiotics, try changing my diet. i did for a week and felt like my symptoms were gone.
This morning, I got severe diarrhea and felt awful.
The PA said it could be die off from bacteria or my IBS.
Is anyone familiar with what I have going on?
can IBS happen every day?

"Die off from bacteria" means what? I'd want to know what the PA meant. Diet is one factor among many in IBS. I know that if I introduce a food that I've not eaten ever or in a long time, my gut reacts. Grapes are in season here. They are so tasty. Yet eat too many and I'll suffer awful gas. It's a fruit we have available only in summer. Gut isn't happy with change!
