Hey guys a few months ago I had the same problem as you and I got it solved and discovered the cause so I want to share it with you because I hope you all get well, I know it's possible. I think that it's not a food problem, but a problem of the sphincter. At least, that was my case.
My problem was a MS flare-up. Apparently, it affected my spine in the part that regulates bowel and bladder function. MS can cause bowel and bladder incontinence, in my case it was not very severe but I had gas incontinence and all the problems you commented, which was very embarrassing and affected my social life a lot. You are not alone and no, you are not crazy. But if you want your problem to get solved what you should tell your doctor is that you have gas/fecal incontinence, so your problem will be taken seriously.
Now here are the things that doctors prescribed me and worked for me: Important: Please don't medicate yourself !! Bear in mind I have MS and this might not be the cause of your problem. Maybe yours is a pelvic floor issue not related to something neurological, but something else!!
1) High megadoses of metilprednisolone , which is a steroid (this is the treatment used for MS flare-ups). This reduces inflammation more quickly and alleviates symptoms.
2) Pelvic floor physiotherapy: low impact pelvic floor exercises (search in the internet). Biofeedback, and posterior tibial neurostimulation with TENS. You can buy a TENS machine in Amazon called Beurer EM49 and you can learn how to and where to place the electrodes if you search "posterior tibial neurostimulation" on google.
I have been well for 4 months. I recommend taking care of your mental health and surround yourself with people that care about you. If you need it go to a mental health professional. I have done that also.
