I want to start an elimination diet but I don't know where to begin. There are simply too many diets out there and many of them are contradictory. One diet would say we should avoid red meat and another tells us to eat red meat only. My past attempt in changing my diet has been all over the place, I've tried a mainly liquid diet which left me more bloated than ever and I've tried plant-based diet which kind of backfired because it made me smell nastier than normal.

I am really lost and would love some advice from anyone who had sucess with their diet.

As the poster above said, try low FODMAP. It's restrictive but not as bad as something like carnivore.
 
I have been on elimination fodmap ffor wo wweeks.am seeing some days of less symptoms, but C not always alleviated. I had to stop Linzess, too harsh and losing too much Wright. I now take a dose of miralax in morning and colace at night. Sometimes if get backed up, warm prune juice helps and ducolax 5 MG occasionally.
 
I feel like diet is a way to relieve extra gas someone might have, but not the actual root of why it leaks. And I don't even think bloating can be related to diet in some if not most cases where there's loss of control over the anal sphincter because one may not be able to expel any gas at all. I experienced that problem myself earlier on (~Feb 2023), where I went to the bathroom feeling like I had to pass a bunch of gas, but the only thing that came out was mucous. I basically had to do yoga poses on the toilet and manually spread my cheeks to even just make a tiny toot. It got bad enough to the point where I took an enema nozzle and put it in my anus to let the gas escape. I'm not at that point anymore because I have a better relationship with the toilet now, but just saying excess gas may not even be excess, just trapped to the point it can mimic bloating caused by diet.
 
There have been times where I've had no leaky gas (like this one) and my diet was the worst. I drank an extra large 7-Eleven mocha latte everyday and had a lot of candy and cookies.

For me anyway, I doubt there is any correlation between my diet and leaky gas. If there was a correlation, I definitely would've experienced this in my teens 10 years ago.
 
Low fodmap has helped me the most. You need to experiment with it because you will find some of the high fodmap foods do not cause you problems and some that are marked as low will give you issues. But it is a great starting point. I do great going on a carnivore diet. No carbs is good for me except unless it is really fatty meat, I have discovered I do not absorbe a lot of fat well.
